The "Mama's-a-bad-cook-cookie"
We're loving these this summer, when it's too hot to fire up the oven and make REAL cookies. (who am I kidding? I don't do real cookies. It's almost a rule, that I shouldn't even try - not being the best, interested & most attentive cook in the world)
But these, -I- can't even mess up... or at least haven't yet. And, my kidlet can take an active role in not messing them up, too. I've been eating them since I was a wee little girl too. If you don't already do "no bake cookies" then you should give them a try!
(No bake cookies)
2 c. sugar
1 stick of butter
1/2 c. milk
1/2 c. cocoa
1/2 c. peanut butter
1 t. vanilla
3 c. oatmeal
1/2 c. nuts (optional)
Bring sugar, butter, cocoa, and milk to a boil for 1 full minute.
Remove from the heat and add vanilla and peanut butter. Blend.
Add oatmeal and nuts.
Drop by teaspoonfull onto wax paper.
Allow to cool and then peel from the wax paper and serve.
Serve with milk..in fancy teacup, if you've got it. Yum.
